Effects of Ethanol on Nutritional Status

  • Chapter
Nutrition

Part of the book series: Human Nutrition ((HUNU,volume 4))

Abstract

Ethanol may affect nutritional status in diverse ways which stem from the many levels at which alcohol and nutrition interact. Ethanol may directly alter the level of nutrient intake through its effect on appetite, displacement of food in the diet, or by virtue of its deleterious effects at almost every level of the gastrointestinal tract. Through its effect on multiple organs, especially the liver, ethanol alters the transport, activation, catabolism, utilization, and storage of almost every nutrient studied. Alcoholism remains one of the major causes of nutritional deficiency syndromes in our society. Ethanol is directly toxic to many tissues of the body, and this effect may be potentiated by concomitant nutritional deficiencies. The resulting pathologic alterations represent an enormous medical burden requiring complex nutritional therapy. Thus, because of its widespread use and multiple effects, ethanol has a major impact on the overall nutritional status.
