Abstract
Polysaccharides and their derivatives that are water soluble and produce a high viscosity at low concentrations are commonly called industrial gums. They have a large and growing role in both the food and non- food industry. Some twenty polysaccharides are collected, produced or modified to fill industrial requirements, but the pool of polymers keeps changing as it is modified by availability, application requirements and costs.
