Abstract

The area of two-dimensional and quasi two-dimensional systems and their static structures and phase transitions has become a major field of study. If one restricts oneself to “pure” lipid monolayers and bilayers, one must be prepared to discuss, for example, the various structures that arise at the main, pre- and subtransitions (Chen et al., 1980) in bilayers, structures in monolayers that give rise to their characteristic isotherms, as well as effects of pH and ionic concentration on their interactions in the polar region. Some of the phenomena apparently involve competition between interactions in the hydrophobic region of bilayers and those in the polar region, while there is considerable disagreement as to the mechanisms that give rise to monolayer isotherms and the location and nature of their critical points. In a mixed system, a great variety of bilayers, ranging from two-component systems (lipid 1-lipid 2, lipid-cholesterol, lipid-protein) to biological membranes, can occur. A brief review such as this could fall between two extremes: either essentially a list of references with a few words added to say what they contain; or a more detailed exposition of only a few topics. Recently there have been several reviews of theoretical work concerned with monolayers (Bell et al., 1981), the physical effects underlying membrane organisation (Israelachvili et al., 1980), the main lipid phase transition at Tc (Nagle, 1980), the methods used and models constructed to study phase changes in one- and two-component bilayers (Pink, 1981), and models of monolayers and bilayers containing intrinsic molecules, such as anaesthetics (Caillé et al., 1980).
