Adverse Effects of Normal Nutrients and Foods on Host Resistance to Disease

  • Chapter
Adverse Effects of Foods

Abstract

Our studies show that under certain circumstances normal nutrients may have adverse effects on host resistance. Undernutrition and deficiencies of certain nutrients may protect the host against intracellular infections, while refeeding with normal foods and repletion of nutrient deficiencies seem to have the potential for activating quiescent disease. In some societies, long standing deficiencies of nutrients are part of an ecological compromise favoring optimum co-existence of host and pathogens. Once this equilibrium is disturbed by upgrading nutritional status, disease may erupt with unusual violence.
