Abstract

Convenience foods is as ambiguous a title as the chapter title of “Miscellaneous Products”. For the purpose of this discussion convenience foods include refrigerated ready to consume meals and entrees, prepared salads, sandwiches, pizza, fresh pasta, soups and sauces. These products have received some form of heat treatment (minimally processed), are for the most part low acid, are marketed refrigerated (between -2°C and +4°C) but not frozen and require little preparation before consumption.
