Abstract

In North America, colorectal cancer is a commonly diagnosed neoplastic disorder and a major cause of cancer mortality (American Chemical Society, 1977; Schottenfeld and Haas, 1978). Despite improved therapeutic modalities, the prognosis, especially for advanced disease, remains dismal (American Chemical Society, 1977; Schottenfeld and Haas, 1978). Epidemiologic studies suggest, however, that this malignancy is, in part, environmental in origin, and thus potentially preventable (Weisburger et al., 1977). Among several possible agents, dietary factors have been implicated, including excesses of fat, cholesterol, refined carbohydrate, and protein (especially beef) as well as deficiencies of dietary fiber and some trace elements. Because of inherent difficulties in conducting longterm prospective studies on specific dietary components, such as the fiber polymers, in humans, alternative methods have been employed to explore their role, if any, in colon cancer pathogenesis.
