Abstract
Since a couple or years there is increasing interest in particular fatty acids first of the n-6 series and later on also of the n−3 series. It was generally accepted that fatty acids such as γ — linolenic acid, stearidonic acid, eicosapentaenoic acid and docosahexaenoic acid have important implications in the general context of health, either prevention or intervention. Lipids, from a quantitative point of view but more and more from a qualitative point of view have become a centre of focus and play an important role in the strategy “health by nutrition”.
