Abstract
Campylobacter ssp. are generally described as being microaerophilic; that is, they are purportedly unable to grow in or tolerate the concentrations of oxygen present in the air. These pathogens must be able to survive in foods in the presence of air, however, since they are the major cause of gastroenteritis in the U.K. and food is the main vehicle for their transmission.
