Abstract

Beef production in France originates from different types of animals produced more or less intensively. Approximately two thirds of the beef produced comes from the dairy herd and one third from the beef cow herd, Most of the steers and heifers, and recently a small proportion of the young bulls are reared principally on grass. Intensively reared young bulls contribute only about 14% of beef produced (Table 1) and one quarter of these are from the beef herd, and use grass during the suckling period. Dry culled cows are also often finished on pasture.
